Hospitality and tourism education as well as business studies across Europe have seen much adoption of digital technologies in the post-pandemic era. New initiatives of learning design and processes have been established to facilitate students and educators move towards more flexible and digitally enabled learning methods that transcend limitations of time and space. However, such developments are often institute specific and are applied in different ways and through differing interpretations across institutes and countries. ‘Learning design’ is often debated in this process, ranging from the formulation of learning interventions to evaluation and assessment methods. In this light, mapping contemporary learning designs and best use cases would be beneficial to advance learning designs towards current and future needs of didactics to prepare future hospitality leaders. The use of immersive environments has highlighted the need for a structured pedagogical approach when using such tools (Tuominen et al., 2022). We propose a co-creative setting to facilitate sharing and learning among hospitality educators and related stakeholders in a symposium as a place where we are exploring possibilities for envisioning the next step in hospitality education. The plurality of views, approaches and methods will allow one to go where one cannot go alone. Co-creation journeys can help to explore complex questions, wicked problems, and innovation challenges in the current educational climate.
